Broccoli, Pasta and Pesto Salad
2 cups uncooked fancy pasta
2 cups diced ham or pork or beef or chicken or turkey
2 cups broccoli florets, steamed til barely tender
1 1/2 cups shredded low-fat mozzarella cheese
1/2 cup shredded parmesan cheese
1 cup lightly packed fresh basil leaves
2 cloves garlic *
1 cup fat-free mayonnaise
1 Tbs lemon juice
1/2 tsp salt
1. For color contrast, serve with cherry tomatoes, cut in halves.
2. Cook and drain pasta; cool.
3. Combine pasta, meat, broccoli, and cheeses in large bowl.
4. Put basil and garlic in food processor or blender; whiz.
5. Add mayo to food processor or blender.
6. Mix thoroughly.
7. Stir into pasta mix.
8. Toss to coat.
9. Refrigerate for at least 4 hours before serving.
10. During the last 1/2 hour of chilling time, toss once to mix.
11. For color contrast, serve with cherry tomatoes, cut in halves.

*note: I found the garlic to be overwhelming in this dish, and I will likely omit it if/when I make this again.

This wuffy LOVES using radiatore pasta. It holds the sauces so nicely, especially the thick ones used for pasta salads. And they shape is just "spiffy". *grins*

if the garlic gets too potent, Vrghr recommends using roasted garlic instead, or sautéing the fresh garlic until it smells nutty and fragrant. It cuts the sharp, hot "bite" of the garlic and makes it sweet and nutty, but still keeps some of that essential garlic flavor. :)
