Anyway, thought I'd include my recipe on how to make a japanese-style noodle soup quickly!
Prep time: 30 minutes
Cooking: 20 minutes
Ingredients:
Water
udon noodles
Soy sauce or miso
black vinegar
egg
green onion/scallion
Shiitake mushrooms
1. Boil water
2. Place Udon into water.
(Frozen, refrigerated, home-made. etc) [if you'd like to learn how to make your own udon noodles, check out this video: https://www.youtube.com/watch?v=WyIvHZOXaY8 ]
3. When finished cooking, remove the noodles from the water using chopsticks, and set aside in a bowl. Then add an egg into the remaining water.
(Completely optional to not drain, it just saves time. Feel free to cook the egg first, or drain and put in more clean water to boil again)
4. Crack open the egg and slice in half. Set aside in the same bowl as the noodles.
5. Depending on the size of your bowl, put about 1/2 to 3/4 cup of clean, cold water in the pot.
6. If you'd like a miso base, add 1 heaping tbsp of miso into the water. If you'd like a soy sauce base, add about 3-5 tbsp of soy sauce.
7. Add 2 tbsp of black vinegar to the soup.
8. Add chopped and rinsed shiitake mushrooms to the soup.
9. Boil the mushrooms until soft, but still with some texture. About 3-5 minutes.
10. Add the soup to the noodles and egg.
11. Garnish with thinly chopped scallions.
12. Serve immediately and enjoy!
