Eevee currently evolves into Water, Thunder, Fire types via stones, as well as other types, Dark and Psychic based on Night and Day if they have maximum happiness/loyalty to their trainer before they level up. Leaf and Ice type based on whether they are evolved in a forest or snowland with a moss-stone or frozen-stone. Finally, the newest type is the Fairy type, which requires multiple requirements to acquire, maximum of a trait stat like cute or beauty and maximum happiness/loyalty.
So... why is there no ghost, bug, dance, and so forth? Even though all other types have been around a long time? Probably because it makes the least sense to evolve? Well, whatever it is, Eevees have lots of options, and Eevees are certainly the only Pokemon capable of so many numbers of evolutions that exists so far.

I think they wanted to leave themselves an opening to show off new features through Eevee's evolutions. I came up with a pokemon idea that covers all current types, but pic-wise I don't think I'm at a point where I can draw them yet.

On another note Rotom has way too many types as well.

Wow... I forgot Rotom recently got new forms in addition to his old 3 transforms...
