* From Chris: I would add here - Quails are very, very small birds and their cooking time is short, depending on the kind of oven you have!
(15 to 20 minutes if that)
Make SURE you keep an eye on these to prevent overcooking / burning, and save the last basting of hoisin at the end, for more of a punch!
