Most hunters tend to leave the heart behind when they field dress a deer. Since pointing out that the heart is good to eat, more of the folks that I hunt with are bringing the hearts in to feast on as the rest of their deer is being processed.
This is a recipe that I have personally tried with success on those occasions where the heart could be salvaged.
