For the FACCC Virtual Pot Luck (with updated notes)

Pan Pizza - Stove top style
Ingredients
Frypan with a well fitting lid or aluminium foil
oil of choice (I used rice bran oil)
Base:
½ cup Self-Raising flour
½ cup plain flour
2/3 cup lukewarm water
Pinch of salt
1 rounded tsp dried yeast about 8g
1 tsp honey
Top:
Plus your choice of pizza toppings apply in order
1. Sauce (tomato or BBQ or mixed)
2. Toppings (Suggestions: Ham, pineapple or whatever you like)
3. Cheese (mozzarella)
Instructions
Lightly oil the pan
Mix the base ingredients and spread over the pan base
Use a spoon and spread sauce (I had bbq sauce and mixed herbs)
add toppings of choice (I had ham, salami, metwurst, feta cheese and broccoli pieces)
Then top with cheeses (I use mostly mozzarella)
Place the pan on medium heat (about 160ºC – 170º C) and cover with lid making sure the vents are closed or cover and seal with al-foil. Cook for 5 minutes.
Then turn lid to open side steam vents or lift the edges of the foil, reduce heat to medium low (about 130ºC – 150º C) and cook for a further 10 minutes.
Carefully slide pizza onto a board, cut and enjoy.
Notes and Tips
1. The dough can be mixed in the oiled pan or in a bowl (I like to mix in a bowl first)
2. To smoothly spread the dough, dip the back of a large spoon in the oiled pan and use the back of the spoon to smooth out the dough to the edges of the pan
3. You don't have to preheat the pan
4. This recipe makes one pizza in a medium skillet pan...my pan is electric and I cook the pizza on setting 7 then turn it down to 5
5. If using an oven proof pan pop the lot under the grill near the end of cooking just to make the cheese extra melty and brown
