
This is a really easy way to make roasted chicken in the oven. I also am including my red skin mashed potato recipe.
Chicken:
You will need:
Chicken pieces (I recommend bone in leg quarters)
Broiling pan
Barbecue sauce
seasoning for the rub (Mrs. Dash mixture)
Rub the raw chicken with seasoning before placing onto a broiling pan in the middle of the oven. Fill the bottom of the pan with about a half inch of water.
Place into a 375 degree oven and let cook for fifteen minutes on each side. Once this is over flip them back up to skin side up and baste with barbecue sauce and then let them cook for an additional fifteen minutes.
For the mashed potatoes:
You will need:
About ten medium potaoes. I peel half of them so you do not overpower the mash with skin flavor.
A large pot to boil said potatoes
Water.... to boil said potatoes...
Seasoning to taste
about a quarter cup of milk
Three to four tablespoons of butter
This is really easy..... boil the potatoes for about 25 minutes. They should crumble when you squeeze them... Drain said potatoes and return them to the still warm pot. Add the seasonings, butter and milk and beat them with a wire whisk until they are fluffy....... serve.
