I won't like harp on it, but I got introduced during SEED. Don't watch SEED. SEED is bad, and it kills your soul.
I don't know how the characters in the newer ones are (I've heard Unicorn is good, but isn't that one also UC?) but SEED almost killed Gundam for me. So. Whiny.
I've always heard good things about Wing, but I never got to watch it aside from random eps here and there.
...I'm a really bad fan, because I have to ask who it is in your avatar. (I've not got to watch all of Zeta, or any of Double Zeta. Plus, I only got to watch half of Char's Counterattack because the creepy guy who was watching it with me made gross jokes about me liking Char. Like really gross ones.)

Unicorn is good and it is part of UC. it's basically the wrapping of of the Zabi family's story, and has the most amazing and beautifully animated mobile suit fights. it does fall into the whiny teenager trap a bit, but there are other characters who make up for it. plus did I mention how gorgeous the mobile suit battles are? they're super gorgeous. like mind-blowingly gorgeous.
Wing is good, although the story is confusing, and the teenagers are a bit whiny. if you like action and don't want whiny teenagers, I'd recommend G Gundam, which is about a fighting tournament for Gundam pilots, featuring a lot of people who think the best way to express emotions is to show their opponents the strength of their fists.
once you've gotten at least Wing and G Gundam under your belt, you can try Build Fighters and then Build Fighters Try, which is like Yugioh except for Gundam models, which sounds lame but it's actually incredibly fun to watch. just a bunch of kids fighting their custom built Gundam models with each other, and for some reason Ramba Ral is a character in them

Lol, G Gundam is totes the DBZ of Gundam. Yes, I watched it, and it was super special!
