This is my bastardized American version of Malai Kofta, a delicious vegetarian dish hailing from India. And one of my favourite Indian dishes.
+Bunch cilantro
+4 potatoes (Russet)
+1 lb farmer's cheese (Paneer or any ethnic cheese works- I used a wheel of mexican goat cheese), as long as it isn't heat reactive it'll work fine. (Cheddar and jack and stuff will melt during frying and make a hot mess)
+1/4 Onion
+2 Serrano peppers
+1 Anaheim pepper
+3 medium sized ripe tomatoes
+Flour
+Water
+Oil for frying
+Curry powder
+Chili Powder
+Garam Masala (Crazy kind of indian spice you can get in the grocery store)
+Garlic powder
+Salt
+Brown Sugar
+Powdered Ginger
+Cream (I used light)
+Coriander powder
Bake your potatoes (I nuked mine, ghetto kitchen wassap) until soft and are tender when poked with a fork.
Get a big ole bowl
Mash up your potatoes, skins and all(or without, if you prefer) in said bowl. Cut up your cheese (Hopefully if its the right kind it'll be super crumbly and can be crumbled in there).
Add 1/3 cup (About 1 handful, or if you have massive gorilla hands, 1/2 handful ;) ) chopped cilantro
Mince your onion, and other vegetables if desired! (Shredded carrots, minced red peppers and so forth are very tasty)
Mince up your 2 serrano peppers, add them into your mixture.
MIX WITH YOUR HANDS (Until thoroughly mixed, the potatoes and cheese should be uniform and combine to form VOLTRON)
MAKE A HUGE MESS <--- mandatory
Form into balls about the size of golf balls(or smaller, or larger, depends what you like), set aside
Make a watery batter out of flour(White flour) and water. Should be the consistency of a melted milkshake. Set aside.
To make the sauce:
Puree your anaheim pepper and tomatoes together. Combine on medium heat with about 1/2 a cup of cream(Until an orangey colour). Add about 1 tbs brown sugar, 1 tbs curry powder, Salt to taste(I used about 1 and 1/2 tbs coarse kosher salt), 2 tbs garam masala, 4 tbs finely chopped cilantro, 1/2 tbs chili powder, 1 tsp garlic powder, 2 tbs coriander powder. Combine until tasty, add more or less of whatever ingredients you like. If the taste of tomatoes is still too strong, add a touch more brown sugar. Combine until simmering, keep stirring. Keep warm while you fry your Koftas.
Get a frying pan, fill it with maybe an inch and a half of oil(I used vegetable oil), roll your koftas in your batter, then drop them in oil. Wait til golden brown and set on a plate with paper towels on it, drain the hell outta them.
Serve fried koftas with tomato gravy.
Garnish with a piece of cilantro if desired.
Delicious.
