I ADORE QUINOA! I can't get enough of it some days. This is one of my best things my vegan cousin introduced me to. Its taste and texture is a bit like brown rice crossed with oatmeal. Fluffy, nutty, but kinda of creamy. It sounds weird unless you've had it before. I am super happy with how its spiced and smooth. Added bonus ... slow cooker. Put it in the pot and let it go until I get home.
Ingredients:
1 c quinoa, rinsed
1 (28 oz) can of diced tomatoes
1 (14 oz) can diced tomatoes with green chilies
2 (16 oz) cans of black beans, rinsed, drained
1 (15 oz) can of corn, drained
3 c chicken stock
1 large turkey breast, frozen or thawed (cook longer if frozen)
2 tsp garlic powder
2 tsp cumin
1 tsp crushed red pepper
1 Tbsp chili powder
Directions:
Toss everything into slow cooker and cook for 6-8 hours on low or 4-7 hours on high. I added frozen turkey breast to mine and cooked on high for about six hours. As long as the meat is cooked – it’s done!
Take the breast out just before serving, shred to your hearts content, toss it back in the pot, and let it simmer for about 30min.
Top as you wish!
