Super simple and quick. Easy comfort food. I love serving this with fries or cole slaw ... and a pickle. Ugh, I need to get better photo equipment so that I can work with the picture re-sizing and cropping.
Ingredients:
2 Tbsp butter
1 medium onion, chopped
1 Tbsp all-purpose flour
2 cans beef consomme (found on broth and soups aisle or beef broth if it's cheaper)
1 1/2 pounds deli sliced roast beef
Montreal Steak Seasoning Blend - or salt and pepper
4 sandwich rolls, split
Provolone cheese (or cheddar/Amereican/Swiss)
Directions
In a large, shallow skillet over moderate heat, melt butter. Add onion to butter and saute 2 minutes. Add flour to butter and onion, cook a minute longer. Whisk in consomme in a slow stream. Bring sauce to a bubble and allow to simmer over low heat until ready to serve sandwiches.
Pile meat loosely across your cutting board or a large work surface. Season meat with grill seasoning or salt and black pepper. Set out small ramekins/bowls for dipping sauce, 4 dinner plates and 4 split torpedo rolls. To assemble, using a pair of kitchen tongs, dip meat into loose au jus sauce, letting it heat for 3-5min and pile into rolls. Top with cheese and onion slices. Set bowls/ramekins with extra dipping sauce along side the sandwiches.
