More on the quick and easy menu, SHRIMP! Simple, spicy, yummy goodness. Dress how you like: Bacon, lettuce, tomato, pickles, spicy mayo, etc etc. The only thing to screw this recipe up is over cooking or under cooking the shrimp. This makes about 2 sandwiches.
Ingredients:
1/2 pound medium shrimp, peeled and deveined
1 Tbsp extra-virgin olive oil
1 Tbsp Creole seasoning (I picked up mine in the spice aisle at the store)
1 French baguette
Toppings of your choosing
Here We Go!
Toss the shrimp with the olive oil and Creole seasoning. Let sit for 5-10 min stirring occasionally to marinate.
Heat a grill pan to medium-high, and grill the shrimp for about 3 minutes each side until pink and opaque.
Remove the shrimp from the pan, and set aside
Split the baguette horizontally, scoop out some of the bread (if desired), and spread any condiments on it.
Place the shrimp on the bottom half of the baguette
Then pile on the toppings!!
Place the top half of the bread onto the sandwich, and divide the sandwich in half vertically to make two sandwiches.

Also looks like a great opportunity for wuff to use that "home made aioli/mayo wuff posted a while back, and crank some extra kick into the mayo topping. A little lemon/creole would be YUM, Vrghr thinks!
