These are homemade granola Bars I have been making for
jackthecoonbro over the last month or so. I made two batches with this picture coming from the first one. These bars were rather crumbly so i upped the honey amount in the final recipe to make them slightly more sticky.
Ingredients
8 ounces old-fashioned rolled oats, approximately 2 cups
1 1/2 ounces raw sunflower seeds (shelled or unshelled is fine), approximately 1/2 cup
3 ounces sliced almonds, approximately 1 cup
1 1/2 ounces wheat germ, approximately 1/2 cup
6 ounces honey, approximately 1/2 cup
1 3/4 ounces dark brown sugar, approximately 1/4 cup packed
1 ounce unsalted butter, plus extra for pan
2 teaspoons vanilla extract
1/2 teaspoon kosher salt
6 1/2 ounces chopped dried fruit, any combination of apricots, cherries or blueberries
Procedure:
Place the oats, wheat germ, sunflower seeds and nuts onto a parchment paper lined sheet pan. pop this into the oven at 350 for about fifteen minutes, remembering to stir it every five minutes to ensure even browning. While this brown first prepare your baking pan. i use a 12x6 pyrex baking dish which I butter, line with parchment and then butter the parchment paper as well. This ensures you can simply lift the paper out once the bars are out of the oven and have rested for about five minutes (so the paper has time to cool so it won't rip). Once the vessel is prepared place the liquids along with the ounce of butter and the brown sugar into a small saucepan and begin heating on medium until all of this becomes a homogeneous mixture. reduce heat to low and hold until the oat mixture is toasted. Place the fruit into a bowl once it is chopped into pieces. Once the mixture is cooked place it into the same bowl and add the liquid on top. USING a SPOON mix the mixture in the bowl until it comes together in a sticky mass. Place this into your cooking vessel and use the spoon to press the mixture down into the pan. Place in the oven and lower the heat to 325. Cook for roughly 25 minutes. Take it out and let cool for a minimum of one hour before cutting into bars.
