Yep, its getting near that time again where I get sucked into making more cranberry sauce for the holidays!
This is just a basic sauce from "The Joy Of Cooking" so:
What you will need:
6 - 8 canning jars, plus lids
LARGE pot to hold said cans in, plus plenty of boiling water
canning tongs
heavy duty rubber pads (the kind that opens / closes jars real tight)
1 large bag whole cranberries
2 cups water
1 1/2 - 2 cups orange juice
2 cups sugar (for those of you who are diabetic, I would say use 1 cup of Splenda for baking, or Ball® Low or No-Sugar Needed Pectin...and follow the instructions from the manufacturer, since a little pectin goes a LONG way!)
4 cored apples, roughly chopped
1 teaspoon apple pie spice
SO:
You need that large pot of water, with the jars & lids right in there, boiling on high so that they get good and sterilized.
And you ALSO need another large pot for your ingredients, all together, boiling on high - it will reduce (I'd say it took a good hour or so) and just keep an eye on it since you might get the occasional splatter.
But once its fully cooked down - when its nice and thick - just clear off a nice big space with a large paper towel right over it, (make sure you empty the jars of the hot water...which is where the tongs come in to fish those out, since you don't want to burn yourself!) and then seal with the lids and rings and SEAL THEM AS TIGHT AS POSSIBLE with those rubber pads!
YOU MUST WORK AS QUICKLY AS YOU CAN TO GET THOSE FILLED AND SEALED - MORE IMPORTANTLY, YOU CANNOT PUT THOSE DIRECTLY IN THE REFRIGERATOR ONCE THEY ARE SEALED.
This is because:
1.) They will never gel properly if you do that and 2.) You might -also- have the jar explode right in that refrigerator, since hot+cold+glass does NOT mix!
Just let them cool off in a regular dry spot and you can tell when they're done when you hear a "pop" come from the lids!
These will be given as gifts to coworkers...friends...etc :3
And the relish / sauce is pretty good on its own !

Wuff makes homemade cranberry relish for the holidays too, but has never tried canning it! Might have to give that a whirl this year!
Vrghr likes to add a bit of orange zest with the orange juice in his berries. Those apples sound like a nice idea too! Going to have to try your variation this year!
