Dough:
1 C Milk
1/4 C Butter
3 C Flour
1/4 C Sugar
1/2 Tsp Salt
2 1/4 Tsp Yeast
1 Egg
Filling:
1/3 C Sugar
1/3 C Brown Sugar
2 Tbs Cinnamon (Can be substituted with 3 Tbs cocoa powder)
4 Tbs Butter (melted)
Icing:
1/4 C Butter
1/2 C Cream Cheese
1 1/2 C Powdered Sugar
And all the *cooked* bacon you want
Dough:
-Preheat oven at 350 F
-Combine milk and butter. Heat until butter melts.
-Dissolve yeast in warm milk mixture
-In separate bowl combine flour, sugar, and salt
-Add flour mixture and egg to milk mixture.
-Knead dough for 5-7 minutes
-Rest for 10 minutes. Meanwhile, Mix filling. (sugar, brown sugar and cinnamon)
-After rested, roll out dough into 14"x 9" Rectangle.
-Spread melted butter over surface. (I use a basting brush) Evenly sprinkle filling over buttered surface.
-Roll everything up tightly and pinch ends. (roll with the 14" side. You want a long sausage in the end)
-Cut into 12 pieces and place into baking dish or on a cookie tray.
-Rest for 25 minutes
-Bake at 350 F for 20 minutes.
-Cook up bacon and mix icing. Coat rolls with icing and bacon deliciousness when done.
**Side notes**
- When heating the milk make sure it is only hot enough to melt the butter. If it is too hot it will cook the yeast too fast and if it isn't hot enough the yeast wont activate. I usually just boop my finger in after it is heated. If it doesn't burn me or feel too cold then it's good enough for yeast.
- Don't forget the egg. I always do so i thought i should leave a note for you guys.
- Cocoa powder is amazing in these. So if you have no cinnamon then cocoa powder is just as good. You should try it!
- When cutting into 12 pieces cut it in half, cut those in half, then in thirds. I like to lay the pieces next to each other when cutting to make sure they are even.
- When resting the dough place a towel on them to 1. keep in moisture and 2. keep out dust/bugs/ect
- Before adding deliciousness that is icing run a knife between each roll to separate them. This makes them very easy to serve and some of the icing gets between the cracks.
I make this as often as I can. They are just fantastic in every way. The inside stays soft while the outside is crispy. The icing is addictive on its own, with bacon its to die for. I encourage you to try this out as soon as you can.
