This isn't a new recipe. Even when I was young growing up out in the islands, my mother would sometimes make these for me, and I didn't know anyone else who made them. It wasn't until after I moved to North America that I ever saw anyone else's fried egg sandwich. Though they're understandably already a very common food to a lot of people, they still feel unique and special to me.
This recipe is simple and has just three ingredients: Two slices of spelt bread, mayonnaise and two fried eggs. Both slices of spelt bread have mayonnaise on them. The egg isn't just placed wherever inside the bread, because parts of it will want to fall out the side. So instead, I cram as much of the egg piled into the very center as I can, then press the slices of bread like a vice until the egg is squeezed outward to fill the interior.
