There are different theories, tbh, the most plausible says it's a heritage from cats' wildlife-period, cucumbers' shape kinda reminds of snakes. It's not the zucchina itself, thou, it's... the fact the cat turns and sees something "menacing" its territory, even if it stands still. (I'll link you the article, it's pretty interesting)
XD Someone also tried a zucchini, which had the same effect. I also always jokingly like to imagine that Six can't stand vegetables (because I myself HATE vegetables unless they're crunchy and raw!) so if presented with the turian or even the normal version of a cucumber / zucchini, she'd probably pull out a bomb and try and destroy it. Because it's evil and scary.
