Ingredients:
2 thin slices of bread (I recommend a lighter bread, preferably multigrain)
Cream Cheese
Strawberry Compote or Jam
1-2 tbsp unsalted butter
2 eggs
Splash of heavy cream
1/2 tsp caramel extract
1/4 tsp vanilla extract
1/4 tsp cinnamon
pinch of salt
Icing sugar
Maple Syrup
Method:
Spread the cream cheese on one of the pieces of bread, then compote on the other. Put the two pieces of bread together, as if they were a sandwich.
In a frying pan, begin to brown the butter to make beurre noisette.
In a bowl, whisk the eggs, extracts, cinnamon and salt together. Coat the bread completely in this mixture. Don't worry, there will be some left over and you don't have to use all of it, just ensure the exterior of your bread is covered. Place in the pan and fry in the beurre noisette, turning often to ensure that the bread doesn't burn. When the surface is a golden brown and firm to the touch, remove the french toast from the plan and place on a plate.
Dust the toast with a light layer of icing sugar and serve warm with Canadian maple syrup.
