Somewhere between a 'latke' methinks, from

Ingredients:
*Note that what veggies and extras you include are totally optional. Consider this potato customizable so I'm only going to list the main ingredients
-Potato

Story Time
This is like super great for a breakfast idea. A quick snack whatever, this takes maybe 10-20 minutes to make depending on how much you make. For the sake of this and because I was only feeding myself-- I used one potato.
So I took my one yellow potato-- I find yellows work really well for this, you can go red but I recommend avoiding brown because they tend to break down easier. Yellows and reds have the bit of elasticity you need for this sort of thing. All you gotta do it grate this bad boy up. When it's grated you gotta go a gentle compressing in drying the potato with some paper towel, one or two times.
While you're grating put a pan/skillet, whatever you got on medium-high heat with a lil sprinkling of oil and let it heat the heck up.
Also you wanna grate up some cheese-- I used marble, but mozzarella is my favourite for this because it holds the potato together. And really just mix it into the potato gratings with your hands.
Now I like to add veggies into my brekkie. So I put in some mushrooms that needed to be used up. But you can add anything, onion, peppers, eggplant. You name it. And you can also add ground beef if you like, but you gotta make sure it's pre-cooked and then crumble it into your mixture. I also added some ground garlic, pepper, salt (dont forget the salt, add it to the mixture ahead) but you can always spice this beast up with cayenne, paprika whatever it good.
You may have to adjust your cheese by adding more if you're worried it will crumble. But even if it does crumble you're going to have a delicious meal. So all you do at this point is take your ball of potato wonder and put it into the center of the pan. Then you press down on it with a flipper or your hands and let it sizzle, you wanna lower the heat-- you want this to be brown and crisp on the bottom but also cook through. When it is you flip it and do the other side. If your deliciousness isn't cooked through when both sides are browned you can finish it off int he oven-- you can also make this scramble in the oven as well.
If you really want to make sure everything is well cooked, you can also pre-cook the veggies and meat so you dont have to worry about those being undercooked.
Serve with a fried egg on top (or you can mix it in to, either way) with ketchup, spicy mayo, sriracha or whatever sauce you like.
