2 Sticks of butter at room temperature
1 cup of granulated sugar
3 cups of flour
1 tsp of baking powder
1 tsp of kosher salt
2 large eggs
1 cups of white chocolate chips plus a separate 1/2 cup
3 Tbs of matcha powder
2 Tbs of milk
1-1/2 tsp of almond extract
1/2 tsp of vanilla extract
Create a double boiler: Bring a small amount of water to a boil and cover with a bowl. Make sure the water isn't touching the bottom of the bowl. Add 1 cup off white chocolate chips, 2 Tbs of milk, 3 Tbs of matcha powder and stir continuously until melted and well combined. Remove from the heat and set aside to cool.
Preheat the oven to 350 degree Fahrenheit. Combine the butter and sugar in a large mixing bowl and beat on high speed till fluffy about 3 minutes. In a separate bowl combine the flour, salt and baking powder and whisk together, set aside. Add the melted white chocolate mixture to the sugar and butter mixture while beating on high speed. Add in the eggs one at the time Scraping down the sides to make sure its mixed well. Add in the almond and vanilla extract and turn the speed to medium low. Add in the flour mixture in 3 batches. turn off the mixer and fold in the remaining white chocolate chips.
Line two baking sheets with parchment paper. Measure out 1/2 Tbs of dough out, roll them in to balls, and place them on the baking sheets. Bake for 12-15 minutes rotating shelves halfway through. Let cool and enjoy.
