
This is a simple cube steak casserole that can be done in a crock pot or a slow cooker.
Ingredients:
canned new potatoes (I use two to three cans for this, two cans of whole potatoes and one of diced.)
At least 1 pound of cube steak cut into slices.
Cheese sauce: I use canned cheese soup if I am in a hurry, if not I use shredded cheese added slowly (one handful per hour or so)
Two small cans of tomato sauce or one large can
Seasoning
Some water for blending
First step is to sear the cube steak, allowing the flavor to develop a bit better than if you just throw the steak into the crock pot. As you are searing the steak you can open the potatoes, cheese sauce and tomato sauce and add them to the crock pot along with half a can of water. Mix this together thoroughly to combine and add seasoning. I prefer some chili powder, black pepper, Mrs. Dash, minced onion and garlic powder that's been bloomed in warm water for about 1 minute. (remember ALWAYS bloom garlic powder. It will have almost no flavor unless you soak it in a small amount of warm water as it's a dehydrated product.)
Add the seared meat into the crock pot and set it to high for one hour (to allow it to come to a simmer.) reduce the heat to low and cook for two to three hours. leftovers are very good over rice as well.
