So this is one of my favorite things... its a salad but a different type of salad, and probly one of the only "healthy" salads i like. "Healthy," meaning i dont load it up with cheese and bacon bits and what have you... im exploring more of a mostly vegetarian diet. Part of my transition means no beef, no pork, no large game, no turkey because its all loaded with testosterone, and you know what? Im largely okay with this. I already dont like most types of pork, beef is two expensive, turkey just tastes dirty to me, for years now ive been eating mostly chicken, and im okay with sea food. I dont crave meat all the time so im okay with only eating it once or twice a week. This is a bit different for me though because growing up it was drilled i to me that you have to have meat and startch with every meal. Not only is this not very economic but, thats just a vwry heavy way of eating, and i seek for a lighter diet.
So i present to you my hand crafted caprice salad. Its amazing how simple this is yet, you go to walmart and its $5 for half a lbd. This is great for those of you who wish to impress your significant other, parents, who ever. Its bright colours compliment the holidays and is a great companion when served as a small side for lunch or dinner.
Ill warn you this though, i hand crafted this off the top of my head so my mwasurements may be a bit off. You may need to adjust them. Im trying to transpose this from my memory of earlier this evening.
YOU WILL NEED:
1/3rd cup of small motzerella balls
1/8th (half of a 1/4th) cup of balsamic vinegar
1/4th cup of seseme oil
1/2 cup of sweet white wine
1/4th cup of water
1 1/2 tea spoon of honey
1 small handful of sweet little tomatos
1/4th of a regular sized cucumber
About 4 teaspoons of fresh basil
1 tea spoon of pesto sauce
A pinches of granulated salt
A few pinches of sea salt.
THESE ARE YOUR INSTRUCTIONS
1. Take a small handful of your tomatos and slice them into 1/3 or 1/4th of the size. Place them in a bowl, lightly sprinkle some balsamic vinegar over the top and sprinkle a pinch of granulated salt. Mixe the vongar and salt into yhe tomatos and let them sit off to the side for now.
Now this next oart is how youll make the vingarett. It makes enough for maybe 3 or 4 servings if served conservatively.
2. Add 1/2 a cup of wine and 1/4th a cup of water to a small sauce pan. Over a low geat bring to a simmer for 3 minutes. Afterward remove the wine from the pan and let it cool.
3. Ince cooled poor the won into a blender, pour in 1/8th a cup of balsamic vinegar, 1/4th a cup of sesame oil, 1 1/2 half a tea spoon of honey, and 1 teas spoon of pesto sauce. Blend on high untill well blended.
This revipe is for preparing multiple individual servings so for the next part treat this as such.
4. Slice 1/4th of the cucumber into thin, almost transparent slices,
5. in a small serving bowl place some of of the slices with 1/3rd a cup of your small motzerella balls, and 1/3rd a cup of your sliced tomatos.and mix them together.
6. Drizzle a conservative amount of your vinegarrett over the top (remember 3 or 4 servings)
7. Break a few small basol leaves up with your fingers and slice them smaller if they appear too big.
8. Sprinkle a pinch of ea salt over the top and its readyto serve.
I hope you e joy it. Like i said this os probly one of my favourite things for some interesting alterations you could take some roasted walnuts and finely chop them and sprinkle them over as well and spruce it up with just a tiny amount of orange peal.
