Salmon is always one of my fave fishies, and
does it justice!
My youngster had a craving for fish so I pulled some big salmon steaks out and rolled them in a home made crusting. Mind you this came out really spicy, I put a little too much pepper in. I loved it but my youngster had a little trouble with the skin side. The fish flesh was succulent and moist while the skin was like a crackling and Oh boy do I love that skin.
Salmon with a spicy rub crust
Fish – Salmon
Lemon juice
a little oil for frying (I used rice bran oil)
Rub - Pepper, mustard seed, Himalayan pink rock salt, dried mandarin peel, dry sage. (I haven't put in quantities but most items are about a 1-2 tsps of each. You need to experiment to choose how you like it.)
Blend or grind to a combined fine powder in an electric grinder or mortar and pestle.
What to do with the Fish
Put onto a plate or suitable container, give the fish a quick drizzle or squirt of lemon juice to moisten, rub all sides carefully with rub mix and let sit for 10 minutes or so.
How to Cook
In a nice hot pan with a little oil of your choice.
Put the fish in skin side down and cook until until crispy about 10 minutes
Turn over carefully cook a further 5 to 10 minutes until desired doneness (some like it cooked through others like it just under)
Salad (combination of below ingredients)
Thin sliced carrot sticks (1 carrot)
Thin sliced apple sticks (1/2 granny smith apple)
Thinly sliced celery
Thinly slice cucumber
Tiny tomatoes
Mayonnaise
Honey Mustard Mayonnaise – I used a commercial brand but it can be home made, I didnt have time to make my own.
- A quick home made version: combine 1 cup egg mayo, 1 tsp honey, 1 tsp fine mustard paste or coarse mustard. salt and pepper to taste. Adjust flavours to suit your personal tastes
Salad has also been topped with a little fried ham
