I would imagine the proliferation of man-pack anti-tank weapons was also unexpected. Especially the RPG-7 or its equivalent. Simple, lightweight, and eminently capable of punching far above its' weight. Plus the fact the warhead is external means adapting to a threat is as simple as upgrading the warhead.
They do have some directed energy weapons but slug chuckers still make up many of the weapon systems. Along with indirect fire weapons like missiles and guided munitions. They just get better range and stealthing of systems along with better sensor capability in some situations. Especially since the Birdies now control the high ground.
I'm guessing that even though they have practical energy weapons, conventional projectile weapons are just as destructive, more reliable, and, perhaps more importantly, much cheaper to produce and maintain, even with material ammunition requirements, which is particularly important when conducting a long-term planetary invasion far from your normal supply lines.
