~ This is from a recipe I spotted on some food blog with...and then went completely bat**** insane making other variations :P
Ingredients:
* optional
2 tubes pre-made croissant rolls (I had the low fat kind, but any kind is fine)
6 jalapenos, cut in half then seeded and deveined
chive cream cheese*
1-2 tsps shredded cheese (any kind)
Other variations:
croissant rolls + jalapenos + Laughing cow cheese + wrapped in sopressata
croissant rolls + jalapenos + brie + dates + crushed smoked & salted almonds
croissant rolls + jalapenos + port wine cheese log + black sesame seeds
croissant rolls + jalapenos + port wine cheese log + sopressata + curry powder
*...I mean, you can do almost ANY kind of filling, even plain or low-fat cream cheese !
(Though speaking for myself, I would do it with the low-fat Neufchatel, not the completely low-fat crap :P)
AND if you are lactose intolerant - you could do this like a baked 'pakora' with some mashed potatoes, lentils, onions and garam masala (the mashed potato mix would have to be chilled a bit first though!)
With all the extra stuff in there though, I would recommend bake this for 20 - 25 minutes at 350, but when they are all nice and browned they are soooo good...and you can even glaze them before hand with hoisin...bbq sauce...hot wing sauce...etc!
