What to do with stale hot cross buns? No more room in the freezer? I was given a small stack of hot cross buns including fruitless ones. Not something I really love but waste not want not. So I turned them into a Hot Cross Bun Berry Pudding.
Hot cross bun pudding – Using up stale hot cross buns
Ingredients
5-6 stale hot cross buns
1-2 cup of frozen mixed berries (or small cut fruit of your choice)
2 tsp Allspice
2 tsp Cinnamon
1 cup sugar
A little extra sugar to sprinkle
3 whole eggs
2 cups Milk
½ cup Cream
1 knob of butter
Method
Grease a large baking dish and pre-heat the oven on 150 ºC (310ºF/Gas mark 3)
The base
Slice buns vertically and stack on an angle standing up, try to fit as much of the buns in as possible without overcrowding.
Sprinkle the fruit on top and between slices
Sprinkle 2 teaspoons of sugar and 2 teaspoons cinnamon over the buns and fruit then set aside
The Custard Mix
Melt a knob of butter
Beat in the sugar and spices
Beat in 3 whole eggs
Now beat in the milk
Heat this mix, stirring regularly until it begins to thickens (This can be done in the microwave or the stove top, I used the microwave in one minute increments on high and stirred every minute. The mix stared to thicken at the three minute mark.)
Beat in the cream
Put it all together and bake
Carefully pour the custard mix over the bun base. Do this slowly to give the buns a chance to soak up the mixture and let the mix get in between gaps. Press the buns down a little to help them but try not to overflow the baking dish
Put the lot in the pre-heated oven and allow it to cook for approximately 45 minutes to an hour or until the custard sets and the top a lovely golden brown. (Note that different ovens may take longer.)
Dust with confectioners’ sugar if desired.
Serve
Serve hot or cold
Lovely with ice cream or whipped cream or just on its own
Note: I like mine hot without the extra sugar, cream or ice cream.
