Just a diagram for a few friends who are somewhat confused about the edibility of birds. The general assumption among American furs, raised of factory farm chicken with its bland taste and mushy texture is that all birds are somehow identical repositories of protein awaiting consumption. This is not true.

My country for example contains a bird known as the pukeko (Say poo-kek-oh.) or Australasian swamp hen. Its tendons and muscles often turn to *bone shards* as the bird matures. An old Maori joke says that you can kill one with an axe, boil it with the axe, then eat the axe, it'll be more tender.

The edibility of birds has in fact often had a relationship with how well they coped with humans. Go figure.
