This is simply a side dish or in my case it will end up being a snack. I like beetroot and was given three bunches of them so I'm inclined to play with them a bit. I have added two additional recipes that these simple roast beets can be turned into but as I wasn't taking them any further I have no photographs of them.
Pictured are the roasted beets showing off the glossy sauce in the bottom left of the container.
Scrub, top and tail the baby beetroot (3 bunches which equal approximately 24 beets)
sprinkle with a little salt and pepper
roast in a little oil of your choice, covered, in the oven or a lidded fry pan until just soft making sure to turn them at least once.
Optional: rub with paper towel or use rubber gloves to remove the skin if you don't like it.
Put them into a container that won't stain
While hot apply 4 tsps of honey, a good squirt of lemon juice, salt and pepper.
Baste the beets in the honey lemon.
Serve with a sprinkle of chives as a side dish
OR
Not Pictured: create a beet sauce for roast meat, kangaroo, beef or lamb. This sauce is a robust sauce that compliments red meats rather than white but adds a beautiful rich colour to any dish.
Put the beets and sauce into a blender, add a little cream if needed and blend into a sauce.
Straining is optional but recommended.
Heat the lot, do not boil, in a pot with some butter and let it reduce until it thickens.
Serve over or to the side of your choice of protein.

Not Pictured:
Slice the beetroot, layer into a greased baking tray, with some cooked bacon and sliced cooked sweet potato, top with cheese and bake until the cheese is brown for a tasty root veg side dish. Drizzle any of the honey/lemon sauce over the top of the cheese to add a special splash of colour and taste.
Ps: the honey lemon sauce which becomes quite a bright pink colour because of the beet juice can also be used as a delicious sweet cordial even with the added pepper and salt. just add some ice to a glass, pour some of the sauce over and top up with lemonade, soda water or plain cold water.
