One vertex at a time is much harder to be creative with though
Sculpting gives you freedom but it does take some time getting used to, since you gotta know some anatomy of faces, but it takes some practice and in a month or 2 of that, you can make a somewhat decent model already.
And you can modify it whenever and never have to delete a sculpt since you can change it into another species whenever.
But youll have to retopologise it later if you want cleaner mesh, but then you CAN do it one vertex at a time, but do it with a skinwrap modifier over your model, or other retopologising ways on youtube.

Yeah, I do understand that I have been modeling for a while now, mostly I am a lot better doing inorganic objects, but I have done full out characters. Still I haven't done it enough to a point to where I am happy about it. I can show you to stuff I have done which I haven't put on FA. I could note you my skype.
Lol idk how rigs work but do you mean a Skeleton ? caus on Youtube there's plenty of videos on making skeletons
And well you cant really port a sculpted model into games because of the high polys
So you'd either do a messy decimate in blender or retopologise it manually or such
