In this I mentioned making lamb sausage rolls but I also made lamb and cheese scrolls
Ingredients
puff pastry sheets
I use flat pastry sheets (see https://www.woolworths.com.au/Conte.....ium/018366.jpg )
cooked lamb that has been minced (I had the meat from 2 lamb roasts available for this)
1 onion
1 carrot
2 stalks celery
1 clove garlic
2 eggs
1/2 cup ground meal (can be breadcrumbs or nut meal etc)
salt and pepper
sweet chilli sauce
finely minced mint and parsley
a dash of mint sauce
Egg Wash: 1 egg beaten with a dash of milk for glazing
grated cheese for scrolls (mozzarella is what I had)
Method
Prepare a baking tray with either some oven paper or oil spray & flour. Pre heat the oven to 180º Celsius. (360º Fahrenheit)
Rolls
Mince the vegetables, start by cooking the onion and garlic then add the carrot and celery. When the veg are almost soft take them off the heat and add to the minced cooked lamb in a large bowl. Mix well with breadcrumbs or meal and eggs. Add sauces and spices of choice. My pastry sheets come in large squares so I cut a pastry sheet in half, make a sausage shape out of some of the mince and lay it on the pastry lengthways and moisten one edge of the pastry with either a little egg wash or water. Roll the pastry around the filling so that the join sits underneath, cut into segments, put them onto a greased oven tray or tray with oven paper on, brush on some of the egg wash and bake in a hot over for about 20 minutes or until golden.
Scrolls
Using the mix of lamb meat, veg and spices etc. Smear a sheet of pastry with lamb mix, sprinkle with your choice of grated cheese (I used mozzarella). Leave about a finger width along the outside edge, roll the pastry and seal the edge with a little water or egg wash. Cut into 2 inch sections, place on tray sideways, reshape a little if necessary, brush on some of the egg wash and bake in a hot over for about 20 minutes or until golden.
