The big hole isn't the tongue, it's the opening of the trachea. They breathe through it. The tongue does retract into a much smaller hole just beneath that's really hard to see, and isn't shown clearly here.
The pokey-out-breathing-tube adaptation allows them to continue to breathe even while their mouth is busy trying to swallow a giant prey item whole. Abuse that thought as you will.
