
Italian style Falafel burgers in brioche burger buns

Italian style Falafel burger in Brioche buns.
And here's the recipe:
Brioche burger buns:
- 235 ml warm water
- 3 Tblsp warm milk
- 21g fresh yeast
- 2,5 Tblsp white sugar
- 2 big eggs (1 for the dough, 1 to brush on the buns)
- 427g wheat flour
- 1,5 Tsp salt
- 2 Tblsp soft butter
- Sesame, pretzel salt or pyramide salt
Whisk water, milk, yeast and sugar, let it rest for 5 minutes until it starts to foam a little. Combine the flour, salt, butter, yeast-milk mixture and 1 egg in a big bowl and mix well (dough hook or hand) for about 8-10 minutes. The dough should remain lightly sticky.
Let the dough rise for 1h.
Form 6 balls and place it on a sheet of baking paper with some space between the ball. Let it rise for another hour.
Heat up the oven to 200°C, top – and bottom heat.
Mix an egg with some water and brush it on the dough balls. Sprinkel with sesame seed and/or pretzel salt.
Bake for about 15 minutes.
Falafel patty:
- 100g chickpea flour
- 50g wheat flour
- 100 ml water
- salt, spices after your taste
- chopped onion
- chopped parsley (or any other fresh herbs you like)
Mix everything well, let it soak for about 10 minutes. The dough will remain rather squashy. If it's too runny add flours.
Form patties with wet hands (or better .. paws ^.^) and fry in a pan on low heat with some oil until golden brown
Tomato sauce:
- 1 small onion, chopped
- 1 large clove of garlic, finely chopped
- fresh herbs (rosemary, oregano, thyme, basil)
- 200ml passata or sieved tomatoes
- salt, pepper, spices to your taste
- olive oil
Heat up oil in a pan, add onions and braze the onions until glassy. Add herbs (except basil) and garlic, continue to braize a litte, then add passata and let it cook on low heat until sauce thickens.
Add fresh basil.
Building the burgers:
- Brioche buns
- Falafel patties
- sliced tomato
- sliced black olives
- rucola
- tomato sauce
- processed cheese slices
- Parmigano cheese, shaved or roughly grated
Little advice: When building the burgers, place 1 or 2 slices of cheese on the hot patties to already melt them a bit. Toast the burtger buns only the inside.
Serve with mixed salad and enjoy :)
