
Tagliatelle with Vegetables and Cream Cheese Sauce
Ingredients (serves for 2):
250g Tagliatelle (or any other noodles you like, preferred bronze dies pasta. I've used Chili Tagliatelle)
200g Mushrooms
1 big Bell Pepper
ca. 100g Broccoli
1 Onion, chopped finely
2-3 garlic cloves
Fresh herbs (I've used Lemon thyme, rosemary & Oregano)
(curly) parsley
100-150g cream cheese (Low Fat)
50-100g feta cheese
2-3 ladle Noodle Water (don't pour away the whole water if your noodles are done earlier as the vegetables)
Olive Oil
Butter
salt, pepper, spices to your taste
Wash and clean the vegetables and chop them, except for the mushrooms, bell pepper into small pieces, broccoli into slightly bigger pieces and the onion should be chopped finely as well as the parsley. Now cut the mushrooms into slices and cut in half if you have big ones.
Peel the garlic cloves and crush them lightly, they shouldn't fall apart. ;)
Take a big pan (one with a lid) and warm it over low heat. Now add 2 tablespoons Olive Oil and an tablespoon butter. Wait till the butter is melted completely but be careful that it doesn't burn. In the meanwhile heat up the water for the noodles.
Add the finely chopped onion, the crushed garlic cloves and the fresh herbs into the pan and braise lightly until the onions are glassy. Add the bell pepper and broccoli pieces and close the lid.
Wait till the bell pepper and broccoli is almost done and don't forget to stir everything from time to time. Now you can remove the herbs and add the mushrooms, close the lid again and stew till the mushrooms are hot and shrinked a bit. Open the lid, add the cream cheese and a ladle of the noodle water. You haven't forgotten to add the noodles to the cooking and salted water, have you?
Stir everything till the cream cheese 'melted' and dissolved in the water. Add salt, pepper, spices and the parsley and stir till it thickened a bit. If the vegetables are not done yet add a bit more noodle water and continue till it's done. At the end crumble the feta cheese over it, in not too small pieces, and gently fold it in. You are done!
Serve it with the noodles and enjoy your meal!
