Time to bring back the nostalgia, thanks to
!Open For Critique / Constructive Criticism******************************Well here's a recipe from the past, bit of a golden oldie. My mum used to make this for us and I haven't made it in 20 odd years. I had forgotten how simple and delicious this is.
Total cost was just under $10 and can serve 6 easily so I guess this qualifies for the FACCC $10 challenge too.
Porcupine Meatballs by yelleena
Ingredients
Meatballs
500 grams mince (I used beef but chicken also works)
1 egg
1 tsp onion powder (can use 1 finely diced onion)
1/2 cup raw long grain rice
1 tablespoon mixed herbs
1 teaspoon garlic powder (can use 1-2 crushed fresh cloves)
1 tsp coriander seed powder
1 tsp celery salt
1/2 cup water
1/2 cup breadcrumbs or stuffing mix
Salt and pepper to taste
The Sauce
1 tin condensed tomato soup
1 soup can of water
2 tablespoons tomato sauce
2 teaspoons brown sugar
2 tablespoons Worcestershire sauce
1 tablespoon sweet chilli sauce
Salt and pepper to taste
Optional
½ to 1 cup of frozen mixed veg (peas, carrot, corn suggested)
Other
Mash potato to serve
Method
Carefully combine all meatball ingredients and using 2 teaspoons of mince mix at a time make the mix into small meatballs.
In a large pot, mix all the ingredients for the sauce and bring to the boil. Turn the heat down to let the sauce simmer and taste the liquid carefully. Adjust the salt, pepper to your tastes or add a little more sugar if you like a slightly sweeter sauce.
Carefully put the meatballs into the liquid, don’t splash them in all at once. Put a lid on, and let simmer for approximately 40 – 50 minutes, gently stir every 15 minutes. You want the meatballs to be cooked through and the rice soft. The idea is that the rice will stick out of the meatballs supposedly like porcupine quills.
Optional:
At the 30 minute mark throw in some frozen mixed vegetables (peas carrot corn suggested)
To Serve
Serve with mashed potato
