
This is an easy way to roast sunflower seeds at home. I do this since I am on a low sugar/low salt diet and normal sunflower seeds have way too much salt. These were made with bulk unsalted non-roasted sunflower seeds.
you will need:
1-2 pounds of sunflower seeds
a very large bowl
water
Salt and seasoning to taste
The first step is to soak the sunflower seeds in a large bowl, letting the water come at least 1-2 inches above the seeds themselves. You will need to let the seeds steep in the water for at least 8 hours, however overnight is better. As the seeds are soaking you can add salt to the soaking water if you wish to. This is when the salt will permeate the seeds so it needs to be added now.
after the eight hours are up drain the seeds very well either in a salad spinner or in a LOT of paper towels. Leave the seeds on a sheet pan to dry further. After about 1 hour of drying to can add additional seasonings (for these I added fresh cracked pepper) and then place the seeds on two roasting pans spread out into a single layer.
Preheat the oven to 300 degrees. Roast the seeds from 0 to 50 minutes. You are looking for the seeds to lighten in color from black to light brown/grey and to crack down the center of the shell.
Allow to cool and store in an airtight container.
