A rather classic Italian specialty from

Heya people, it's

The Neopoletani have their pizza.
And the inhabitants of the Emilia-Romagna have their Piadina (pl. Piadine) as their national dish.
A flat bread that can be filled with about everything you like
Piadine:
230 g flour (I used 115g of TIPO 00 flour and 115g all-purpose flour)
100ml of Liquid (100ml water or 50ml water + 50 ml milk)
30 g olive oil
1 Teaspoon salt
1 Teaspoon baking powder
Mix all dry ingredients, then make a dent in the middle. Pour in the oil and water,/milk, form a dough and knead it for about 10 minutes until it is soft, elastic and doesn't stick.
If it gets too firm, add more water, if it gets too sticky, add flour.
Form a ball, cover it with plastic wrap and let it rest at room temperature for 30-60 minutes.
Divide into three portions and use a rolling pin and your hands on a floured surface to form a very thin disk of dough. Use a fork to prick it several times, this will avoid air bubbles.
Heat up a large pan and bake the dough without fat until dark brown spots form.
Try to fold it, as long as it's hot, so the Piadina will not break when it turns slightly crispy.
Fill the Piadina with everything you like ^_^
I used a homemade tomato sauce as a base for two of the Piadine:
chopped, canned tomato or Passata
olive oil
chopped onion
chopped clove of garlic
salt, pepper
Fresh herbs (rosemary, thyme basil), chopped
Sweat the onions carefully in olive oil. Add rosemary and thyme, as the need heat for the taste. Add garlic and stir for a few more minutes. Make sure not to burn the garlic.
Pour in the Passata or chopped tomato and cook it until the sauce thickens. It should get very thick.
Season to your taste with salt, pepper and spices.
As the last step, add chopped basil.
Here are some different, homemade Piadine varieties I made today ^_^ I hope you enjoy them.
From top to bottom:
- Piadina with Mozzarella di bufala, sliced tomatoes, fresh basil and homemade tomato sauce
- Piadina with Parma ham, rucola, shaved Parmigiano and homemade tomato sauce
- Piadina with Italian baked ham, Ricotta cheese, Mozzarella di bufala, caramellized onions and mushrooms (use honey instead of plain sugar for even more taste), radiccio and black olives.
