Something for Passover that you can enjoy on any given day :3
Ingredients:
1 cup walnuts, toasted and finely chopped
2 cups sliced apples (I got the pre-sliced kind, its a lot easier) finely chopped
1 cup dried apricots finely chopped
1 cup raisins (you can also use dates or figs)
1 heaping tablespoon honey
2 tablespoons maple syrup
dash of apple pie spice (its a general mix of cinnamon, allspice and nutmeg)
1/2 tsp salt
First you toast the walnuts in a large saute pan for about 2-3 minutes, until you can smell them toasting. Then take them off immediately to cool, and chop (your mini-chopper / food processor is your friend here) until you get the nuts crumbled.
Chop the apples the same way, and then the apricots...
Then put in the apples in the saute pan, along with the raisins and apricots, and keep to a medium low...
Then add the honey - it was still a bit tart, but I didnt want to have it too sugary - which is where my stepmom had the brilliant idea of adding in the rest of the maple syrup we had left over!
Stir with the salt and spices until all cooked and combined, and then serve...or let cool, and you can use it as a salad topping...for ice cream...goes very well with lamb (and pork, as non-kosher as that sounds :P)
