I know some great Prog rock. :P Ever heard of Enchant? You might like it. They're such a great band. Very mellow.
Threshold is Prog Metal, but you might dig them too. Most people are like "There is no way that's Metal". If you want, give Pilot in the Sky Of Dreams a shot. It's a great introduction song.
