My first character basically ended up as a hybrid STR/DEX guy who seems to be a huge Bloodborne fanboy in terms of clothing, haha.

I wouldnt recommend it. Folks are learning how to parry the estoc and the Farron Greatsword so peeps are getting punished for it more often. Pyromancies are strong as hell it seems though. Im trying to run a magic/pyromancer hybrid and the pyromancies are like HOLY SHIT. xD
Get the fuck off with that estoc cancer bullshit, haha.
No, seriously, Sorceries have little to no tracking and partially have long wind-up animations - bullshit for PvP and for PvE as well if some Bloodborne-style enemy throws a 6-hit combo at you. And on top of that there is the FP / Mana system seriously nerfing it as well. In PvP it's only really good for being the annoying guy ™ in the gank squad who distracts you all the time, haha.
