Fried Rice
3 ½ cups - cooked ‘leftover’ rice. (cook the rice a day before and set in the refrigerator)
1 cup - shredded or chopped cabbage.
2 Bell Peppers - sliced thin into strips or cubed. Any color of pepper is good, I used Yellow and Red to add color appeal to my rice since a lot of the veggies already are green!
½ cup - fresh/frozen peas. Can is okay but make sure you drain and rinse them good!
2 cups - Broccoli florets. (Blanched, so they're easier to chew for some of part of my family; you don’t have to blanch yours!)
2 cups - shredded carrot.
4 strips of chopped - bacon. Yes BACON! <3
Soy sauce.
Garlic
Salt/pepper : suit to personal tastes
Chopped green onion for decoration.
Oil .
In your Wok,(if you don’t have a Wok, you can use a pan with high sides is recommended! ) heat up some oil and when its good and hot, add your bacon until its cooked through; just at the point of becoming crispy. Drain the bacon and set aside.
In your bacony oil, saute your garlic, peppers, carrot and finally your cabbage. Add in some soy sauce and let your small array of goodness absorb some of that soy.
Time to add your rice! Take it from the fridge and place in your Wok! (leftover rice is best for fried rice because the grains will stay together and not become mush as its cooking in the pan. My first time making fried rice i didn’t do this step and regretted not doing this step; so make sure to make your rice a night ahead or hours before you decide to make this!)
You want your rice to be coated in the oil, so stir to coat; once confident, let your rice mixture set; the grains will start to fry. Don’t let it sit too long, you don’t want burned rice! Stir, allow to fry and stir again. The rice should start to change color.
When your rice is half or mostly fried; add the rest of your goodies; broccoli, carrot,peas and re-add your bacon. Gently fold them into the rice; you don’t want to mess the grains up or smash your peas! Through the process, add salt, pepper and more soy sauce depending to your tastes and your guests.
You’ll know when the rice is done with it becomes aromatic and the rice has completely fried (turned a yellowish due to the oil)
Your Done! Pat yourself on the back and enjoy! Or serve it with this chicken recipe bellow!
Honey Spiced Chicken
Frying the Chicken!
2 Lb - cubed chicken
2 - eggs
½ cup - milk
1 cup - flour
½ cup - plain bread crumbs; you can also use Panko
Spices! : Onion powder, Garlic Powder, Pepper, Salt
Oil for frying. Or use a deep fryer.
Heat your oil to at least 375.
Beat your eggs and milk together until blended. Set in a large bowl and add your chicken, allow it to soak whilst you create the breading.
Add your dry ingredients into another bowl and whisk together until well blended.
Take your chicken from your egg mixture a bit at a time and add it to your breading bowl; coat evenly. Take the portions you've coated and fry until golden brown.
Drain over fryer.Place cooked chicken into a clean bowl lined with paper towel so that the extra oil can drain.
Over your cooked chicken so that it stays warm whilst you cook the rest of your chicken.
Once your Chicken is cooked, keep it covered and make the Honey Spice sauce!
Honey Spiced Sauce
1 1/2 tablespoon - pineapple juice
1/2 cup - honey
1 tablespoon - brown sugar
¼ cup - soy sauce
1 teaspoon - minced ginger
2 cloves - minced garlic
1 1/2 tablespoons - red pepper powder ( I used Singsong Korean Hot Pepper Powder; you can use what you can find or substitute with another type of pepper powder or even use dried red chili peppers that you can find easier in your international isle or spice isle. Make sure you chop them and remove most of the seeds.! ) adjust the pepper powder to your tastes.
In a pan or another wok; heat it up with some cooking oil. Add your garlic, ginger and pepper powder (or dried peppers!). Stir and allow to cook for 30 seconds.
Add soy sauce, honey, juice. Stir. Let it bubble for at least two minutes.
Finally add your brown sugar and stir constantly until the sugar is dissolved. The sauce should be nice and thick.
Add your cooked chicken; coat evenly and serve! Goes great with fried rice or fresh steamed rice!
