Homemade shook and baked chicken with Jiffy cornbread mix instead of breadcrumbs! Delish, slightly sweet with nice juicy chicken in the corn crust! :9
Ingredients:
(4) chicken legs, separated into thighs and drumsticks (~$2.00)
(1) box Jiffy cornbread mix ($0.50)
Rinse chicken in cold water. Pour cornbread mix into clear plastic bag (I used one left over from a loaf of bread). Place chicken into bag one piece at a time and shake until coated. Bake at 375°F for 45 minutes. Serve with side dish of your choice (in my case, leftover spaghetti). Devour! :9
