This is an easy low sodium beef noodle soup recipe. This was made in about an hour using low sodium beef stock.
Ingredients:
Two cartons no sodium/low sodium beef stock
Two cups of water
Seasoning to taste (This was done with Mrs. Dash garlic and herb seasoning, plenty of ground pepper, and red pepper flake)
1 teaspoon garlic powder
1 teaspoon onion powder
1 pound of browned ground beef
1 package of orzo pasta or any other pasta shape you enjoy
Methodology:
Boil the pasta according to the package directions but pull the pasta roughly 2 minutes before the packaging says it should be done. add the two cartons of beef stock and the two cups of water to a stock pot along with the browned beef, pasta, and seasoning. Add any optional vegetables you would like to the soup (this one contains carrot stripes and sweet corn). Mix the ingredients together and let the soup raise to a boil over high heat. Reduce the soup to a simmer and continue to boil for at least 30-45 minutes, or until the noodles are tender and the flavors have mixed.
