I learned very quickly after the first mimic in dark souls, that there is a proper procedure to opening a chest:
1. Look around a chest for any buttons that may cause you to become a pin cushion for poisoned arrows
2. Strike the chest once with your strongest weapon
3. Say 10 Hail-Marys and ask that nothing smite you down when you open this chest
4. Open it, but instantly dodge-roll away so that you don't get poisoned or skewered by a trap
5. Claim treasure and run
