I like to do a lot of cooking since my parents suck at cooking things and my brother doesn't now how to cook things aside from basic things like ramen noodles and scrambled eggs. I had leftover salmon from last night's grill out. I have sort of a love-hate relationship with salmon in general, so whenever I can, I take the opportunity to make salmon taste a little better. This is what I came up with. This makes a nice meal for 1, possible 2 people. If you're planning on having this for a family dinner, you may want to double this recipe.

ALLERGY WARNING: CONTAINS EGGS AND SALMON (FISH)
Ingredients:
(for croquettes)
1 cup of cooked salmon (either fresh cooked, canned or leftovers)
1 teaspoon of garlic powder
1 teaspoon of dill
1/2 teaspoon of lemon juice
1/4 cup of finely diced white onion
2 eggs
2 tablespoons of water
1/4 cup of flour
1 1/2 cups of panko bread crumbs
salt and pepper to taste
Your oil of choice for frying
(for sauce)
1/4 cup of mayonnaise
1 tablespoon of lemon juice
1 teaspoon of dill
1 1/2 teaspoons of garlic powder
Equipment:
1 skillet or frying pan
Several bowls
Plates
Spoons or forks to mix
Paper towels
Measuring spoons or cups
Tongs or spatula for flipping
Instructions:
1. Put enough oil into your pan or skillet so that it covers the bottom by 1/2 - 1 inch, heat the oil until a drop of water sizzles when dropped in.
2. Mix the salmon, garlic powder, dill, lemon juice, 1 egg, onion, 1/2 cup of bread crumbs, salt and pepper until well combined. Form small patties out of the mixture.
3. Beat the remaining egg with the water. Coat each patty with flour then dip into the egg mixture and then coat with breadcrumbs.
4. Fry the patties until golden brown on each side. Usually this is no more than 1-2 minutes on each side if your oil is hot enough. Once the patties are cooked, drain on a paper towel covered plate.
5. Prepare the sauce by mixing mayonnaise, dill, garlic powder and lemon juice. Serve croquettes with sauce.
6. Clean up and eat.
Variations:
Other types of fish like canned tuna, leftover cod or tilapia also work well with this recipe.
Green onions and red onions work as well, or you can skip the onion entirely if you don't like onions.
If you use fresh garlic in place of garlic powder, limit yourself to 1/2 or 1 clove since you risk overpowering all other flavors with fresh garlic.
If you can't get panko bread crumbs, regular bread crumbs, cracker crumbs and wheat germ work just as great. Stay away from Italian seasoned bread crumbs though since it doesn't mesh well with the other flavors in these croquettes.
