First off, he normally does dishes by filling up the whole sink, rather than running the water. Yes, its less wasteful that way, but you are also rinsing your clean dishes in the same water that your dirty dishes are sitting in! ew....

Second, he tends to run straight hot water, as opposed to blending in some cold water so you dont burn your hands. Seems he has a really REALLY high pain tolerance to hot water!

most apartments out here cant afford those modern fancy-ass lever taps that control both temperatures at the same time. Believe it or not, they are actually really expensive and dont connect very well with a lot of the older plumbing out here.
You dont actually have to fill the sink though.
Contrary to popular belief, you are actually able to open up both sides at the same time without the whole system exploding! The water flowing from your tap can be comfortable without having to open the hot, close it, then open the cold. Just open them both!

I also have two controls on the tap, but I just do dishes with only hot water - for some reason, when I open the hot water lever and the water heats up, the waterpressures just drops, so I have to open more and more. If I try to mix hot and cold water, I end up spending quite some time adjust one side up and the other down, and vice versa - it can take minutes before I achieve desired temperature. So I just gave up - I use rubber gloves with textile gloves inside to avoid burning my hands.
At least the showed has a unit with just one temperature lever, and an other for waterpressure. That would be the ideal tap for me, also - one lever only for temperature, and another only for waterflow.

The taps you are talking about are much more common in britain. You see, in old times the hot water would sometimes get contaminated and wreck the cold drinking water so they separated the taps. Apparently the brits liked the design and a lot of modern homes still have them!
I, however, am in Canada where we have a single spout with two controls. Sometimes they are knob shaped, sometimes they are lever shaped, sometimes it is a single lever that controls both at the same time for no reason. But there is always only one spout.

I can't for several reasons.
1) My hands are mega sensitive to hot water and I really don't like submerging them.
2) My good knives rust easily.
3) I don't like washing my dishes in water that is saturated with grease and ick.
4) if my hands touch ONE THING that is even slightly slimy in that water I am DONE. I cannot continue. I am that grossed out.
