Started this without planning on the end result.
I soaked some of my mixed beans overnight (Mung, Black Lentil, and Brown Lentil), and thought about making just mac&beans. Then I remembered I have cans of vegetarian chili so I thought, why not?
Whenever I boil beans for mac&cheese, I put the pre-soaked beans in first before turning on the stove, and I add just a little sea salt for fun. Once the water is boiling I dump and rinse the beans and start over, but this time I add the noodles.
Once the beans and noodles are soft (to taste) I dump and rinse again.
I warmed up the can of chili in the pot on leftover heat and just added the cheese powder. No milk or butter!
Finally after stirring those together I added the beans and noodles, and got what you see here.
I can't taste the cheese much but the chili is still a little spicy. in all a really successful experiment!
