This is something to start off

Ingredients:
1 medium to large zucchini, rinsed with the tip cut off
4 large garlic stuffed olives, minced (you can also use jalapeno stuffed, pimento stuffed, or any other kind of stuffed olive to switch this up)
4 large-ish marinated artichokes, chopped
3 sun-dried tomatoes, finely chopped
handful of pre-shredded quesadilla cheese (original recipe calls for feta, but you can go without cheese as well...maybe use marinated mushrooms, chilled and grilled eggplant, etc.)
1 tablespoon red wine vinegar
1 - 2 slices prosciutto or your other favorite deli meat, torn up (or go meatless if vegan)
1/2 tsp lemon pepper
1 large box grater (or spiralizer, if you want to be fancy about it :P)
All you need to do is give the zucchini a quick rinse, then use your grater to make long 'spaghetti' strands. You need to be firm but NOT ultra forceful, since the veggie can break apart on you if pushed too hard!
Then chop everything else...put in the vinegar and pepper,,,give everything a quick toss...and then put in a carryout bowl (as you see here) for lunch!
Hmm, next time I'll add in some roasted red peppers, or those colored baby peppers for more contrast...though the hot pickled peppers also come to mind too ! ;)
