Because of how the "curse" affects her. Rabbits are normally so docile in nature that being turned basically made her into a rabbit that also eats meat and blood and makes her sensitive to too much sunlight. She really only has two powers, so her life isn't too much different from what it was.
And she finds that funny because it was different than all of the normal vampire stories she's grown up with.
