First off excuse the camera quality of the photo. I apologize and secondly, this serves 4 people and it's tonight's dinner. Anyways, onto the recipe:
Ingredients:
1 1/2 pounds bologna Sausage( I actually used some Eddy's fully cooked smoked sausage already. Didn't make a difference)
1 package (18 oz) mixed vegetables
2 apples, peeled and cut into wedges
1 tablespoon butter or margarine
Dash of black pepper
1 cup tomato juice
2 tablespoons ketchup
1 teaspoon dried thyme leaves
1/3 teaspoon dried oregano leaves
Directions:
1) Slice sausage and cut slices in half.
2) Saute sausage in a skillet in butter until slightly browned.
3) Add vegetables and apple wedges, sprinkle with pepper.
4)Add tomato juice mixed with ketchup.
5) Bring to a boil. Add thyme and oregano, cover with a lid.
6) Simmer over low heat for about 15 minutes or until vegetables are tender crisped. Add a little more liquid if necessary.
7) Serve.
It's also good to note that it's good to serve with spaghetti or over rice.
