Today was a PokeBake! Me and 2 of my friends (who aren't bakers/cooks) came over to my place and we baked some scones! Then we walked down to the harbor to catch some pokemon because what else would we do?? I caught a dratini! This is gonna be a bi-weekly event so I'll get more into baking for pleasure again which I'm sooo psyched for.
Now you can use fresh/frozen cranberries instead of dried just don't re-hydrate them. But seeing as it's nowhere near cranberry season I had to use dried. But honestly the re-hydrated ones with OJ are delicious.

Orange Cranberry Scones
Ingredients:
2c flour
2 1/2 t baking powder
1/2 t salt
1 orange zest
1/2c unsalted butter, frozen
1/2c heavy cream
1 egg
1/2 c sugar
1t vanilla
1c cranberries (dried)
2c orange juice
Directions:
1. Preheat oven to 400*F
2. Put the cranberries in a small pot with the orange juice and boil for 5-7 min to plump. Drain then pat dry with paper towel. Place in a ice bath and then the freezer to cool down. Doing this the night before might be a good idea.
3. In a large bowl whisk the flour, baking powder, salt and zest.
4. Grate the frozen butter or cut into very very small thin pieces. Toss grated butter into the flour mix and combine with pastry cutter/fork/fingers until it resembles coarse meal.
5. Add plumped cranberries to flour mix and toss gently.
6. In a small bowl whisk the cream, egg, sugar and vanilla together.
7. Drizzle it over the flour mixture and then toss with your hands until everything is wet.
8. Work dough into a ball and transfer to a floured surface. Press into as neat a circle as you can. Cut with a pizza cutter or a sharp knife into equal triangles.
9. Place scones at least 2" apart on baking sheet. Brush with egg wash.
10. Bake for 20-25 min or until lightly golden. Cool before glazing
Glaze
Ingredients:
1c powdered sugar
2-3T orange juice (from zested orange)
Directions:
1. Whisk powdered sugar and orange juice. Add more sugar to thicken or juice to thin out.
2. Once scones are cooled drizzle glaze over scones
